1.Preparation Ingredients.

3. Add water to make juice and set aside..

4.Pour the egg whites and yolks into different basins respectively.The basin containing the egg whites should be oil-free.No water.

5. Add white vinegar and 20 grams of white sugar to the egg whites and beat at low speed for one minute.

6. Add 20 grams of white sugar and beat at medium speed for one minute until wet peaks form.

7.Add 20 grams of white sugar and beat at high speed until dry peaks form.

8. Beat the egg whites (pull up the whisk head and there will be small upright peaks) , refrigerate for later use.

9. Add corn oil, dragon juice and 15 grams of sugar to the egg yolks and stir evenly.

11. Preheat the oven to 145 degrees for 10 minutes.Add 1/3 of the egg whites to the egg yolks and stir evenly by stirring or cutting.Do not stir in circles to avoid defoaming.

12. Add the rest of the egg whites and stir evenly, pour from a height of 30 cm Put it into the mold, knock out the bubbles, and bake in the oven at 145 degrees for 40 minutes.

Tips
Be sure not to stir the batter in circles to avoid defoaming.The baking time and temperature should be adjusted according to your oven conditions.
