Eggs: protect eyes and improve eyesight
Ingredients
Flour, leeks ( appropriate amount ) | Eggs ( Two ) |
Oil ( A lot ) | Soy sauce, chicken essence, salt ( appropriate amount ) |
How to make leek and egg pie (home style)

1. Cut the leeks into small pieces and put them in a basin for later use.Beat the eggs evenly and put them in the pot.Scramble the eggs with a little oil and cut them into small pieces.Add the seasonings and mix well; the filling is ready.

2. Knead the dough and stir with chopsticks (stir while adding water).(Knead the dough according to your comfort level) Just stir until it looks like the picture;

3.Spread oil on your hands, grab the thin noodles and form them into small balls;

4.Carefully shape the dough into an irregular cake shape (apply oil if the dough is sticky);

5.Put an appropriate amount of filling;

6.Cover the top of the filling with the filling (as long as the filling does not leak out and is not broken), apply oil if there is any sticking.The finished dumpling is as shown in the picture;

7. Fry in the pan, seal it first, turn on the heat, pour a little oil into the pan, put the dough into the pan with the seal on your hands, seal it downwards, and immediately press it into a cake shape with your hands.Immediately turn the cake shape with your hands (I turned it over from top to bottom with both hands);

8. Turn over as shown in the picture, use a spatula to press and pat, toss the noodles until cooked, then remove from the pot;

9.It’s cooked (fried two pieces);
Tips
Apply enough oil on your hands when frying a pancake, otherwise it will be easy to stick to your hands, and pour a little more into the pan.Oil; there is no limit to the dough water, any clean water will do (I use cold water); when making the pie dough, be careful as the filling may be exposed.If the filling is exposed, first apply oil on your hands and pinch the exposed opening (you can also add some dough after pinching).
