How to make eggplant noodles

1.Prepare ingredients,

2.Remove the eggplant stems and wash them.Dice

3.Remove the stems and seeds of the green pepper, wash it and cut it into small pieces

4.Remove the stems of tomatoes, wash them and cut them into pieces

5.Chop onions and garlic

6. Heat the oil in the pot to 70% heat, add the diced lean meat and stir-fry (I used the diced lean meat that I had fried before, and for the convenience of eating, I will fry the lean meat and put it in the refrigerator).Then add tomato sauce, minced onion and garlic, and saute until fragrant

7.Add green pepper and stir-fry After a while, add salt

8.Add tomatoes and stir-fry, add salt and seasoning

9.Pour in diced eggplant, add dark soy sauce, continue to stir-fry, and add salt

10.Pour in the appropriate amount of water as shown in the picture, bring to a boil over high heat, then simmer over low heat for 10-20 minutes

11.The hand-rolled noodles are cooked directly, mixed together and served
Tips
In the above process, I basically add materials once Salt once, this is my personal habit, put less every time.If you are used to putting salt in once, don’t be like me, otherwise it may be salty
