炝How to make cauliflower

1. Prepare ingredients: cauliflower, fungus, Peppercorns, salt, sugar, oil.There are also onions and ginger that I didn’t take a picture of, so I’ll add them in the picture below.

2. Supplement the ingredients in the picture above: green onions and ginger.

3. Add water to the pot and bring to a boil over high heat.Add the washed cauliflower and blanch for about 1 to 2 minutes..It’s OK to see the cauliflower turn green.

4. Remove the cauliflower from the pot and put it in cold water to cool

5.Use the hot water used to blanch the cauliflower, turn on low heat and blanch the fungus again.When you see the fungus becomes larger and softer, That's it.

6.Put the blanched cauliflower and fungus together and set aside.

7. Add peanut oil to the pot, turn up the heat to heat the oil, and add peppercorns.

8. Turn to low heat and stir-fry the peppercorns until fragrant, and remove the peppercorns.

9.Add in the chopped onion and ginger and stir-fry until fragrant.

10.Add the blanched cauliflower and fungus.

11.Add 1 teaspoon of sugar.

12.Add half a spoonful of salt.

13. Turn up the heat and stir-fry for a while, stir well and turn off the heat.

14.Put it into a plate, and a spicy and refreshing braised cauliflower is ready.
Tips
Cauliflower and fungus should be blanched in boiling water.Remove the peppercorns from the soy sauce pot and discard them so that the soy sauce tastes better.
