Ingredients
Eggplant ( 400g ) | Green pepper ( 1 ) |
Onion ( Appropriate amount ) | Tomatoes ( 1 piece ) |
Salt ( appropriate amount ) | Panthoxylum bungeanum ( a little ) |
| Light soy sauce ( Adequate amount ) | White sugar ( A little ) |
MSG ( a little ) | Minced garlic (appropriate amount) |
How to cook eggplant at home

1.Wash the eggplant and cut into hob pieces.

2. Cut onions and green peppers with a knife and set aside.

3. Heat the oil in the wok and stir-fry the Sichuan peppercorns until fragrant.

4. Add onions and green peppers and stir-fry for a while.

5. Add the eggplant and stir-fry.

6.Add the peeled diced tomatoes.

7. Fry until it changes color, add appropriate amount of light soy sauce, salt and sugar.

8.Add a little MSG.

9. Stir-fry evenly to incorporate the flavour, and sprinkle with minced raw garlic.

10. Stir well and plate.

11.Finished product.
Tips
1.After cutting the eggplant, if it will not be used temporarily, you can put it in water to prevent oxidation.
2.Add a little more oil and sprinkle with raw minced garlic when serving.
