Ingredients
Yam ( 400 grams ) | Oil ( A little ) |

White vinegar ( a little ) | White sugar ( a little ) |
How to stir-fry yam

1.Peel the yam, scrape off the black spots, and cut into slices with a diagonal knife.

2. Put the cut yam into clean water and wash it thoroughly.

3. Boil water in a pot, add a little white vinegar, and add yam.

4.Cook for about 3 minutes.

5. Remove the yam and set aside.

6. Heat a little oil in a wok, add minced garlic and stir-fry until fragrant.

7.Add yam and stir-fry evenly.

8.Put a little salt and sugar.

9. Stir-fry evenly to incorporate the flavors, remove from the pan and serve on a plate.

10.Finished product.Fragrant and white, crisp, tender and refreshing.
Tips
1.Peel the skin thoroughly without leaving any dark spots.
2.Add white vinegar to the blanching water to prevent oxidation.
