Ingredients
Bitter Melon ( 500g ) | Salt ( 10g ) |
Erjingtiao peppers ( 2 pieces ) | Young ginger ( 2 pieces ) |
Single garlic ( 1 ) | tempeh ( 8 capsules ) |
Zanthoxylum bungeanum ( 5 capsules ) | Cooked rapeseed oil ( 15ml ) |
How to stir-fry bitter melon

1.Tender bitter melon, remove both ends, scoop out the inner flesh, wash and cut into thin slices.

2.Cut the bitter melon into slices and marinate with salt for 15 minutes.

3. Shred the two vitex branches, slice the ginger, slice the garlic, tempeh, and pepper.Set aside.

4. Take the pickled bitter melon slices and squeeze out the water.

5. Squeeze out the water from the bitter melon slices and shake them loose.

6. Add cooked rapeseed oil in a pot, heat it up, add shredded chili peppers and stir-fry until wrinkled.

7. Add ginger slices, garlic slices, tempeh, and peppercorns, and stir-fry until fragrant.

8.Put in the dried bitter melon slices and stir-fry over high heat for two minutes until cooked through.

9. Remove from pot and serve.
Tips
1: Bitter melon slices must be squeezed dry.
2: Do not add salt when frying bitter melon.
3: This dish does not require MSG.
