How to make crispy eggplant

1.Cut onion, ginger and garlic into small pieces as shown in the picture

2. Cut the long eggplant into screw shapes, pour a small amount of salt into the starch to wrap the eggplant (use chopsticks to hold it when cutting to avoid breaking)

3.Pour oil into the pot and fry the eggplant over low heat until golden.
4.Cut tomatoes into small pieces, mix mushroom sauce, light soy sauce, soy sauce, salt and sugar into sauce
5.Put the fried eggplant out and set aside

6.Leave oil in the pot, add onion, ginger, garlic and chili and sauté until fragrant, add tomatoes and stir-fry to make juice

7.Pour the prepared tomato sauce on the eggplant
Tips
Fry the eggplant slowly over low heat.If you want it to be crispier, you can fry it again; you can add more or less sauce according to your own taste
