Ingredients
Edamame ( 500g ) | Ginger ( 35g ) |
Salt ( 10g ) | Baking soda ( 2g ) |
White sugar ( 10g ) | Very fresh soy sauce ( 20mI ) |
Balamic vinegar ( 20ml ) | Fish sauce ( 10ml ) |
Red pepper ( 20g ) | Garlic ( 15g ) |
Green onion ( 10g ) |

1.Cut off both ends of edamame and wash them, add 5g salt and 2g baking soda and cook for 15~20 minutes
2. Remove and quickly cool with cold water

3.Cut the young ginger into thin slices, marinate with 2g of salt and drain out the water; dice the red pepper and scallions, and mince the garlic

4. Control the moisture of the edamame, add ginger slices, chili dices, scallions, minced garlic and 10g of white sugar, 20ml of very fresh soy sauce, 20ml of balsamic vinegar, 10ml of fish sauce (optional), 2~3g of salt ( If it feels salty enough, add no more salt) and mix well

Add points Boil the edamame with baking soda and boil it in cold water to keep the original color of the edamame.Cut the ginger as thin as possible, pickle it with salt and then stir in the edamame to avoid diluting the soy sauce and vinegar.If you don't like fish sauce, you can omit it.
