How to make cold lotus root

1.Ingredients required

2.Peel the lotus root The speed must be fast.If the speed is too slow, the lotus roots will oxidize and turn black, affecting their appearance and appetite. After cutting, you can soak it in clean water.Adding some white vinegar or salt can prevent the lotus root from turning black.

3. Cut the green and red peppers into circles and add a spoonful Marinate with salt for 10 minutes to squeeze out the water and make the peppers crispier.

4. When making cold lotus root, you need to blanch the lotus root first., but pay attention to the time and do not let the blanching time be too long.If the blanching time is too long, it will affect the taste of the lotus root and make the cold lotus root taste not delicious and crispy at all.For thick slices like mine, the blanching time should be controlled to about five minutes.

5. After the lotus root is blanched, it must be done immediately.Soak in cold water for a while to keep the lotus root crispy.

6. Add minced garlic to the drained lotus root slices , coriander, chives, green and red pepper rings.

7. Add appropriate amount of light soy sauce, vinegar, salt and sugar, Pepper, stir well to color the lotus root slices, it will be delicious! The amount of seasoning is not fixed.Taste it after mixing the seasoning. The taste can be adjusted according to personal taste. For example, if you think it's not sweet enough, add more sugar; if it's not sour enough, add more vinegar.

8. Drizzle with hot oil

9.Superb! It would be nice to have some sesame seeds at the end
