Leeks: Warm and promote Qi
Ingredients
Chives ( 150g ) | Lao Tofu ( 400g ) |
Eggs (large) ( 1 piece is about 65 grams ) | Red pepper ( 50g ) |
Oil ( 1 tablespoon ) | Light soy sauce ( 10g ) |
Oyster sauce ( 5g ) | Salt ( 1g ) |
How to make chives and tofu

1. Prepare the main ingredients.

2. Cut the tofu into cubes about 2-3 cm in size.

3. Wash the red peppers and leeks and cut them into sections of about 6 cm.

4. Add an appropriate amount of water to the pot, add tofu and add 1 teaspoon of salt (the amount is not included in the ingredient list) , about 1 gram).

5. Bring to a boil and cook over medium heat for 5 minutes.

6. Remove and drain.

7. Beat the eggs.

8.Pour into the drained and slightly cooled tofu and mix well.

9. Put 10 grams of light soy sauce, 5 grams of oyster sauce and 1 gram of salt together and set aside.

10. Heat the pan and add oil.

11.Put in the tofu coated in egg liquid.

12. Fry over high heat until golden brown.

13. Remove the tofu and leave the oil at the bottom of the pot.

14.Add leeks and red pepper.

15. Stir-fry the tofu and add to the pot.

16.Add the sauce from step 9 above.

17. Stir well.

18.Place on a plate and serve.
Tips
1.Boiling tofu with water and salt is to remove the beany smell and increase its toughness.
2.Fry the tofu for a little longer, and be sure to fry it until both sides are golden.
3.If you are using small free-range eggs, you can beat two.
