How to make braised noodles

1.Tear the dried shiitake mushrooms into small florets and soak them in warm water! Soak scallops and dried shrimps in water

2.Wash all the vegetables! Chop the Chinese cabbage and mince the garlic into minced garlic! Cut the onion into shreds, cut the green onion into chopped green onion and coriander, cut into sections, cut the garlic sprouts into sections, take the white part of the garlic and cut into shreds

3. Cut the pork belly into small pieces as shown in the picture

4.Wash the wok ! Add appropriate amount of oil and stir-fry the pork belly until it changes color

5.Add scallops, dried shrimps and mushrooms to stir-fry One minute

6.Add onions, garlic sprouts and white parts and stir-fry

7.After stir-fry until fragrant, take a small bowl to scoop out the excess oil and set aside

8. Add 1500 ml of water after stir-fry! Add the star anise, cover the pot, and cook over high heat for ten minutes.After ten minutes, pick out the star anise, add an appropriate amount of salt and chicken essence, add the noodles, press the noodles into the water, do not stir, and let the noodles fully absorb the essence of the soup for one minute.

9.Sprinkle chopped Chinese cabbage on top of the noodles and cook for one minute

10.Sprinkle the coriander segments, chopped green onions, and garlic sprouts on top, and drizzle with the oil in Figure 7

11.Finally stir the noodles with a spatula, and a shiny noodle is ready

Tips
You must use fresh noodles to make this dish, and the consistency of the noodles is very important.Don’t cook the noodles for too long.Because they are braised noodles, don’t add too much water! Originally, it would be best to use broth for this braised noodles, but due to time constraints, I just used water! Authentic Putian braised noodles also needs to add seaweed, razor clams, and other seafood.Because I was out of town and didn’t have these ingredients, I didn’t add them!
