How to make spicy and sour shredded potatoes

1. Peel the potatoes, grate them into thin strips, put them into cold water to extract the starch, soak them for a while, take them out and drain them and set aside.

Tips
Rinse the starch out of the potatoes so that the shredded potatoes will be crispier.Add some Sichuan peppercorns to make them more fragrant.Saute the Sichuan peppercorns and remove them after they are fragrant to avoid eating whole Sichuan peppercorns when eating.If you like a crispy texture, you can usually cook it after cutting it raw.If you like a softer texture, extend the cooking time appropriately.
