Ingredients
Enoki mushrooms (300g) | Chili oil ( three spoons span> ) |
Sichuan peppercorn oil ( appropriate amount ) | Minced onion and garlic (appropriate amount) |

Rice vinegar ( a small spoonful ) | White sugar ( a small spoonful ) |
How to make red oil enoki mushrooms

1. Cut off the roots of the enoki mushrooms, tear them apart and wash them

2. Boil water in a pot, blanch the enoki mushrooms for 2 minutes, remove and cool them

3.After cooling, gently remove the water with your hands and put it in a basin.

4. Put the chili oil, light soy sauce, vinegar, salt and sugar in a small bowl and mix thoroughly.The chili oil is made by myself and contains a lot of sesame seeds, which is very fragrant.

5. Heat the pot, cook some pepper oil, and remove the pepper

6.Put the minced onions and garlic in a basin, pour hot pepper oil on top, and pour the sauce in the bowl into it , mix evenly

Tips
Don’t blanch the enoki mushrooms for too long, just cut them off.The chili oil can be increased or decreased according to your preference.
