How to make dumplings

1. Add flour, salt and warm water and stir together to form a dough.Do not knead the dough too much. It’s OK if there is no dry flour in the dough! Then cover it with plastic wrap and let it rise for 2 hours.Take out the dough and knead it for a few times.Use a rolling pin to roll it into a 1.5cm thick dough sheet and cut it into strips.

2.Take a noodle and roll it into a round bar of even thickness.

3.A strip like this is about 0.8mm in diameter

4. Prepare a bowl, pour vegetable oil into it, put the kneaded noodles in the bowl, and plate them as shown in the picture.

5.Plate everything well, cover the dough with oil, and let it rest for 1 hour.

6.Put oil in the pot. When the oil is hot, use chopsticks to test for small bubbles on the edge.Remove the noodles.Turn it around on your hands a few times until the joints are sticky with the dough.

7.The dough at this time has been processed by Jingzi, so it has very good ductility and can be twisted on the hand. The noodles are pulled up as they turn.

8. Use 2 chopsticks to penetrate the noodles and prepare to fry them in oil.

9. Fry for a few seconds to shape, as you like.

10. Remove both sides of the fried rice from golden brown.

11. Crispy.
Tips
The heat should always be medium. If the heat gets too high, adjust it yourself. There is another way to do it.When kneading the noodles, add eggs and sesame seeds. The eggs and water should be equal to the weight of water. The other operations are the same.
