How to make steamed noodles (the secret of rolling noodles with your hands)

1. Mix 500g flour, 3g alkali, one egg, and 250g water to form a dough.Wake up for 30 minutes

2. Knead the dough for 10 minutes after waking up.Roll it into thin noodles

Tips
The flour added with edible alkali makes the noodles stronger and less likely to break.You don’t need to add chili pepper and vinegar in the middle of stir-frying the saozi soup, you can add them later when eating
