How to make egg rolls with chives and shrimp skin

1. Prepare the following ingredients.

2.Pick and wash the leeks, drain them and chop them into pieces for later use.

3.Put the chopped leeks in a bowl and break in two eggs.

4.Add salt, a little peanut oil and chopped leeks and mix well.

5. Wash the shrimp skin with clean water.

6. Add the washed shrimp skin to the stirred leek and egg paste (step 4).

7. Stir evenly with chopsticks.

8.Add flour and appropriate amount of water.(Four has different water absorption and can be added in batches)

9. Stir clockwise evenly.If you feel the batter is thick, you can add a little more water and stir.The mixed batter will be thick and fluid.

10. Preheat the pan over low heat, add a little cooking oil, and pour half of the batter , use the spatula to push the batter so that the batter covers the entire bottom of the pan.

11. Slowly fry over low heat and gently turn over to the other side.Take it out when both sides are fried.

12. Place the fried cake on the chopping board and roll it up gently from one side.

13. Cut into pieces and serve, garnish with some wolfberry.
