White sugar ( 300g ) | Rock sugar ( 200g ) |
Corn oil ( 90g ) |
How to make fried pumpkin cake

1.Prepare all the materials

2. First cut the old pumpkin into thin slices, add rock sugar and steam it in a steamer.Boil water and steam for about 20 minutes.Crush all the steamed pumpkin and serve while it is hot. Then add the white sugar and stir evenly.Set it aside to cool for a while and then you can start kneading the dough.(I won’t post pictures in this part)

3. Combine 400 grams of glutinous rice flour and crushed pumpkin Stir evenly and set aside 100 grams of glutinous rice flour. After mixing, you can start kneading the dough. There is no need to add additional water. There will be a lot of water when steaming the pumpkin.Knead the dough into a smooth dough, and use the remaining glutinous rice flour to knead it until it can be removed.Divide the kneaded dough into equal-sized pieces and roll into balls with your hands and press into cake shape.

4. Heat the oil in the pot.The oil temperature should be controlled until there is a small drop when you put down a chopstick. When bubbles appear, you can start frying the pancakes.Fry slowly over low heat, turning over constantly, until both sides are golden brown (fry for about two minutes) and then place on a perforated steamer rack or strainer.Dry the oil and finally put it on the plate.
Tips
Be sure to fry slowly over low heat.If the temperature is too high, the outside will burn and the inside will burn. When frying with an induction cooker, start by heating the oil at 1200.When frying, 600 is usually enough. If you use a gas stove, heat the oil. After oil, turn to minimum heat. The sugar here is for reference only.If it needs to be sweeter, you can add more sugar. The one I made feels just right.
