How to make door-nail meatloaf

1. Add some salt to the flour and divide it into two parts in a basin.First use boiling water and half, then use cold water to mix all the noodles together.

2.2.1 Heat oil in a pan, pour soybean paste, add a little thirteen spices and star anise, Stir-fry sauce.When the aroma comes out, turn off the heat, pick out the star anise and throw it away.Leave the stir-fry sauce at room temperature until ready.
2.2 Wash and mince the green onions, and chop the pork (I think about 7 lean and 3 fat) for filling.
2.3 Mix the pork stuffing, minced green onion, and cooled soybean paste, and add water or cooking oil according to the dry or wet state of the stuffing.
2.4 Divide the stuffing into equal portions, shape into rounds, and place in the refrigerator to set for about 15 minutes.

4.Wrap the meat patty using the method of wrapping a bun

5. Brush a thin layer of oil on a cold pan, set it to medium-low heat, add the meat patties dispersedly, and fry the flat side first.

6.After 2-3 minutes, fry the bottom side until golden brown, turn over as shown.Slowly pour hot water about 3-4 mm deep along the edge of the pot, turn to medium heat, and cover the pot.

7. When the water in the pot has basically evaporated, open the lid, turn to medium-high heat, and fry for about a minute.Serve it out.

8.The door-nail meatloaf can be placed on a small plate.

Tips
Using the decoction method, the meat patties are quickly steamed with water vapor to retain the inner moisture.
