Ingredients
Noodles ( 150g ) | Eggs ( 3 ) |
Shiitake mushrooms ( 5 flowers ) | Oil ( appropriate amount ) |

How to make mushroom and egg noodles

1.Wash the ginger, onion, millet pepper, garlic and mushrooms

2. Slice the mushrooms, mince the ginger and garlic, cut the millet and pepper into rings, and chop the green onion into chopped greens

3.Crack three eggs and put them into a bowl

4.Add 1g of salt

5.Use chopsticks to break up and set aside.

6. Boil water in a pot, add 5g of salt, and wait until the water just bubbles.Noodle.

7. Stir with chopsticks to prevent sticking to the pan.Turn off the heat when the water boils again.Ready to use under the noodles.

8. Heat the oil in the pan, fry the eggs and set aside, leaving the bottom oil in the pan!

9.Saute ginger, onion, white garlic, millet and pepper until fragrant

10.Add the mushrooms and stir-fry for a while

11.Add 500ml water (higher soup is better)

12. After boiling, skim off the floating residue, add the remaining salt and light soy sauce to taste, and finally add the chopped green onion, and the soup is ready.

Tips
① When adding the noodles, add some salt first to prevent the noodles from sticking and becoming sticky.
② We never cook the noodles in cold water.Just don’t cook the noodles for too long, just about 2 minutes, otherwise the noodles will be soft, chewy and unpalatable.
③ There is no need to blanch shiitake mushrooms.Blanching them will lose nutrients and make them less tasty and fragrant.Just clean it.
④This is the amount for two people.If you have more people, you can increase the amount of ingredients.
