Ingredients
| Beef tendon (1 piece is about 350 grams ) | Salt ( 2 grams ) |

How to make beef noodles in clear soup

1. Beef tendon Soak in clean water for 2 hours, change the water several times during the process, and squeeze out as much blood as possible.(Put it in the refrigerator in the summer)

2. Prepare the main spices.

3. Add enough water to the beef tendon meat, add 3-4 pieces of ginger and pour in Cooking wine.

4. Bring to a boil over high heat and cook for about 2 minutes.

5. Remove the foam with warm water and add rosemary, star anise and ginger., shallots, berries and cloves.

6.Add appropriate amount of water.(Slightly more water)

7. Bring to a boil over high heat.If there is any scum, skim it off with a spoon., turn to medium heat and cook covered for 40 minutes.

8. Add salt and continue cooking for about 30 minutes.(Adjust the time appropriately according to your preference of softness and hardness)

9. Remove and let cool.

10. Wash and chop the coriander and set aside.

11. Boil water in another pot.When the water boils, add noodles.

12. Take it out, add 2 spoons of the beef soup cooked earlier and an appropriate amount of light soy sauce and white Add pepper, coriander, and cut a few slices of beef to finish.
Tips
The cooking time of beef is related to the size and variety of beef tendon.You should try it with chopsticks in between according to your own needs.It is not recommended to cook it too soft.
