1. Wash 1 sparerib, boil water in a pot, add the ribs, add cooking wine and blanch ginger slices together.Cook until foam floats to the top, about 3 minutes.

2. After blanching, rinse the ribs with clean water, drain the water and add a spoonful Stir the salt evenly.

3. Heat tea oil in a pan until smoking, pour it into the ribs, and marinate 30 minutes.

4.I had already cut the yam during blanching and poured it into the ribs., add water until the pot is full.I stew over water. The pressure cooker water should be added to half of the inner pot.Set the timer for 20 minutes after the pressure cooker is steamed.I like to eat meat that's rotten, and if I like meat that's tough, I think it only takes 10-15 minutes.

Tips
1.The salt can be adjusted according to the size of the ribs and the water you add.
2.I like iron bar yams, which are resistant to cooking.
3.I use pure camellia oil, not too much, as it will be greasy, or you can choose kelp or radish that can absorb oil to stew the ribs. You don’t need to add tea oil if you don’t have it.
