Shrimp How to make tofu soup

1.Choose fresh river shrimp.If you have stock, you no longer need to use chicken juice.The green beans I buy are cooked and frozen.Just wash them after thawing.

2.Pick the shrimps and remove the shrimp threads, and use absorbent paper to absorb the water.Use a little salt, cooking wine, and cornstarch to stick together, cover with plastic wrap and refrigerate for two hours.

3. Put a little oil in the pan and lightly fry the bacon on both sides, then cut it into small diamond-shaped slices; Cut the ginger into equal-sized diamond-shaped slices.Add appropriate amount of starch soaked in water to cornstarch.

4. Open the box of tofu and change it into 3 cubes.

5. Boil water and add 3 grams of salt, blanch the diced tofu for two minutes and drain.Moisture.

6. Heat the oil in the pan.When the oil is 60% hot, the shrimps will slip and fall apart, and the shrimps will turn red.The volume is poured out to control the oil.

Tips
The reason for using concentrated chicken juice is that ordinary households do not always have stock.There is no need to use chicken stock if stock is available.If you don’t have chicken juice, you can just add some chicken powder or chicken essence.Also, I don’t really like the taste of white pepper, but you can season it with white pepper if you like.
