Ingredients
Pork Ribs ( 400g ) | Ginger ( 4 pieces ) |
Green onions ( 1 root ) | Star anise ( 4 pcs ) |
Zanthoxylum bungeanum ( 1 spoon ) | Light soy sauce ( 2 spoons ) |
Dark soy sauce ( 1 spoon ) | Salt ( 2 spoons ) |
Oil (appropriate amount) | Cooking wine ( 2 spoons ) |
Recipe for Braised Pork Ribs

1.Chop the ribs into small pieces, wash and set aside

2. Blanch in a pot under cold water, remove and drain the water

3.Wash the minced blood with warm water

4.Hot the pan with cold oil, add the rock sugar and stir-fry until the color turns out (fry slowly over low heat, the color is too dark and the rock sugar will become bitter)

5. When the color of the sugar turns into brown, add the drained pork ribs and fry until the pork ribs are colored

6.Add onions, ginger slices, peppercorns, star anise, cooking wine, light soy sauce, and dark soy sauce

7.Add enough water to cover the ribs and bring to a boil over high heat, then reduce to low heat and simmer for 40 minutes.Add appropriate amount of salt to taste and continue to simmer for 20 minutes until the soup is reduced.

8.It has a good color, fragrance, and can be eaten by the elderly and children even if the meat is rotten and the bones are peeled off.
Tips
1.Blanch the pork ribs in cold water to remove the blood, then rinse with warm water.2.Pay attention to the heat when frying the color of the sugar.If the time is too long, the rock sugar will become bitter.3.Add enough water at one time.If the water is not enough, heat the water halfway.4.Don’t add salt too early.Adding salt too early will make the meat rotten.
