Wuxi pork ribs

1. Soak the ribs in water and change the water several times.Then put cold water into the pot, boil and skim off the blood foam.

2. Remove the ribs and dry them.Pour oil into the pot and heat it to 60% heat.Add the spareribs gradually over medium-low heat and fry until the edges are slightly charred.Remove and control the oil.

3.Put all the spices into a gauze and tie it tightly.Red yeast rice or red yeast powder is also packed into a gauze bag.

4. Leave the base oil in the pot and heat it until it is 50% hot, add the green onions and ginger and stir-fry fragrant.

5.Add the fried ribs, cook in the rice wine, dark soy sauce, and light soy sauce and stir evenly.

6. Pour hot water into the pot to cover the ribs.

7.Put in rock sugar.

8. Add the spice package and red yeast rice package, bring to a boil over high heat, then turn to low heat and simmer One hour.Turn the ribs during this period and pay attention to how thick the soup is.

9. Take out the spice bag and red yeast bag, pick out the onion and ginger and add salt and a little honey , turn up the heat and collect the thick soup.

1.I didn’t have red yeast rice on hand, so I used red yeast powder instead.
