When frying the rock sugar, be sure to stir-fry it over low heat continuously. If the rock sugar becomes mushy, the whole dish will become bitter and the taste will be greatly reduced. The amount of water used to stew the ribs can be slightly more, otherwise the soup will be gone before the ribs are cooked, and adding more water will affect the taste.
