Ingredients

How to make Mapo Tofu

1.Cut tofu into small pieces

2.Place in a pot and blanch for 3 minutes

3.Onion Ginger, garlic and chili for later use

4.The essential Pixian Doubanjiang

5. Add oil and stir-fry the minced pork, add 2 tablespoons of bean paste after 30 seconds, stir-fry the red oil, then add the minced ginger and Sichuan peppercorns , stir-fry for 30 seconds and add appropriate amount of water.

6.After the water boils, add the tofu

7. Cook for another 5 minutes, then add corn starch to thicken the sauce, remove from the pan and sprinkle with chopped chives.
Tips
The tofu is first blanched to remove the flavor and harden the tofu.
Don’t add too much salt.Doubanjiang already contains high salt content.
Don’t over-refine the juice, leaving enough soup to serve with rice.
