Starch ( 30g ) | Oil ( Appropriate amount ) |
How to make Jinsha Shrimp

1. Spray salted egg yolk with white wine If it smells fishy, steam it and crush it for later use.

2. Peel the fresh shrimps and remove the sand lines.

3. Shrimp open back.

4.Use paper towels to absorb the moisture from the shrimp.

5. Add salt, cooking wine and white pepper to the shrimp and marinate for 5 minutes.

6. Coat the shrimps with starch.

7.Put oil in the pot, boil, add the shrimps, fry until golden brown and remove.

8.Put it back into the pan and fry for the second time until the skin is crispy, remove and drain.

9.Put some oil in the pot, pour in the chopped eggs and stir-fry until the oil bubbles.

10.Add the shrimp balls and stir-fry until each shrimp ball is coated with crushed egg yolk.
