How to make salted egg yolk swimming crab

1. Wash the swimming crab, peel off the shell and body, remove the white gills and the bottom of the crab , wash.

2.After washing the crab body, chop each crab into 4 pieces with a knife.Put a little dry cornstarch in the bowl, stick one end of the crab with cornstarch, and wrap it in cornstarch for later use.

3.Put the salted egg yolk in a bowl and add some salad oil, mash it into a paste ,stand-by.

4.Put oil in the pot, heat until 70%, add ginger slices, and wrap Add cornstarch to the crab body and then the crab shell.Stir-fry until the crab body and crab shell turn red in color.Remove from the pot and set aside.Add a little oil to the pot again, add the mashed salted egg yolk and stir-fry until fragrant, then add in and stir-fry.Remove the cooked crab body and crab shell, stir-fry until each piece of crab meat is coated with salted egg yolk paste, and finally add chicken essence (a little), salt (a little), chopped green onions, stir-fry, and serve on a plate.
