How to make pig's trotters and soybeans
-

1.Ingredients

2. Soak the soybeans one night in advance , absorb enough water

3. Put the pig's trotters into the pot under cold water, add the green onions and ginger slices , pour a small amount of cooking wine to remove the fishy smell;

4.After the water boils, skim off the floating residue and remove the large amount of water.Remove the pig's trotters and set aside;

5. Pour oil into the pot, add rock sugar, and simmer over low heat Slowly bring to a boil (the fire should be low, otherwise the rock sugar will be easily mushy and the taste will be bitter);

6. After the rock sugar melts, add the pig's trotters, green onion and ginger ingredients and stir-fry to ensure that each pig's trotter is coated with the rock sugar juice
7. Stir fry evenly, add soybeans, add an appropriate amount of water (cover the pig's trotters), pour in light soy sauce, dark soy sauce

8.After the water boils, pour it into a casserole and simmer over low heat for 2 hours

9. After 2 hours, the soup will be almost thick.If you think the taste is not enough, you can add more salt (if you think it is not green, just add a little more) Garnish with celery stalks and leaves to enhance the flavor) and it’s ready!
