Ingredients
Big head shrimp ( 1~2 pounds ) | Pixian Red Oil Bean Paste ( 30g ) |
Red 99 Hot Pot Base ( 10g ) | Ginger and garlic slices ( a little ) |
Edible oil ( 50g ) | White sugar ( appropriate amount ) |
Salt ( appropriate amount ) | Cooking wine ( 30g ) |
Oyster sauce ( 30g ) | Light soy sauce ( 20g ) |
Starch (appropriate amount) | Chopped green onion, coriander ( Decoration as appropriate ) |
Thirteen Incense ( a little ) |
How to braise big head shrimp (Macrobrachium) in spicy oil

1. Clean the big head shrimp,

2.Cut off the shrimp gun, shrimp whiskers and legs, drain the water and set aside.

3.Use thirteen incense, oyster sauce, soy sauce, sugar, salt and marinate for 10 minutes.

4. Heat oil in a pan, add ginger, garlic and bean paste , hot pot base, saute until fragrant.

5. Put the marinated big head shrimp into the pot.Do not add water.

6. Pour like cooking wine along the edge of the pot.

7. Simmer for 1 minute and open the lid.Flip the pan when one side of the shrimp changes color.

8. Simmer over medium heat for 3 minutes, then stir-fry.Add starch (a little thickening must not be too thick, otherwise it will affect the taste and appearance).Remove from the pan and garnish with green onion and coriander.
Tips
No water is added throughout the process.The shrimps will be cooked after simmering them over medium heat for 4 to 6 minutes.If the shrimps are simmered for too long, they will become stale.Just thicken the sauce, don't make it sticky.
