Ingredients
Razor clam( 300g ) | Snow pea( 50g ) |
cooking wine ( 1 spoon ) | Salt ( 1/2 spoon ) |
Ginger ( 3g ) | Garlic ( 2 break ) |
Small chili peppers ( 2 pcs ) | Light soy sauce ( 1 spoon span> ) |
How to fry razor clams

1.Buy it home, clean the outer shell and put it into clean water , be sure to add salt and soak for a while (you can taste the water when adding salt, it must be salty)

2. Remove the stems of the snow peas, soak them, wash them and cut them in half, shred the ginger, chop the garlic and small peppers and set aside.

3.Put the pot on the fire, bring the water to a boil, wash the razor clams and put them in the pot and blanch them one time.

4.Open the shell, remove immediately, wash and drain.

Tips
Because the snow peas are very cooked and the razor clams are soaked, they must be fried quickly.If you don't fry them quickly, they will turn into boiled razor clams.If they are old, they will have no texture, and if they are tender, they will not be cooked and fishy.So you must use the stir-frying method, and the time is only a few minutes.
