How to steam whole eggplant with folded ear root

1.Prepare ingredients.

2. Wash and cut the ear roots into small pieces.

3. Cut red pepper, green pepper and garlic sprouts into dices.

4. Remove the stems of the eggplant, wash it, and cut it crosswise without cutting it off.

5. Place the eggplant on the steamer and steam for 20-25 minutes.

6. Take out the steamed eggplant and place it on a plate.

7. Prepare minced ginger, garlic and chopped green onion.

8. Heat the pan with cold oil, add minced ginger, garlic and chopped pepper and sauté until fragrant.

9. Fold the ear roots and green and red peppers.

Tips
Zheer root has a special taste and cannot be steamed with eggplant.It will become soft and lose its crispiness when steamed.It should only be fried and poured on the eggplant.
The eggplants are steamed for a little longer to make them more flavorful.
