Ingredients
Wuchang fish ( 一 ) | Dougu Lao Gan Ma ( Moderate amount ) |
Zanthoxylum bungeanum ( A little ) | Salt ( appropriate amount ) |
Cooking wine ( a little ) | Onion, ginger and garlic (appropriate amount) |
Lao Ganma’s method of cooking Wuchang fish

1.Select fresh Wuchang fish and slaughter it, add an appropriate amount of salt and marinate in cooking wine for 40 minutes

2. Heat the oil until it is 70% hot, fry the fish until golden brown and set aside

3. Heat an appropriate amount of oil until it is 50% hot, add onion, ginger, garlic, and Laoganma pepper and stir-fry until the flavor

4.Add an appropriate amount of water, put the fish into the pot and thicken it while the blanching sauce is drying

5.Put the pot into a plate, sprinkle with chopped green onion and serve
