Purple Sweet Potato and Coconut Bread( Ordinary flour version)

1.Weigh and mix all dough ingredients except butter, liquid first and then powder!

2. Mix into a ball and knead evenly!

3. Knead the film by hand or use a bread machine!

4.The main techniques of hand rubbing are rubbing and beating! This picture is a hand kneading picture that I borrowed from my three-color egg yolk cake!

5. After the dough came out of the film on the first night, I put it in a basin Cover with plastic wrap and refrigerate until the next night! This method is especially suitable for office workers! On the second night, take out the dough and let it return to room temperature for half an hour! Exhale the air, divide into 5 equal parts, and roll into balls! Cover with plastic wrap and let rise for 15 minutes!

6.Then, start making the coconut filling! Soften the butter, add powdered sugar, beat with a whisk until the volume is large and white in color, add the egg liquid in three times, beat well after each addition, then add coconut milk and mix well, add milk and mix well! Knead into a ball, cover with plastic wrap and refrigerate for two to three minutes.Divide into 5 balls and roll into balls.Cover with plastic wrap and refrigerate until ready! This step can be done in advance when the dough is back to temperature, so it won’t be rushed!

7.Take a piece of dough and flatten it with your hands! If it's sticky, apply a little corn oil!

8.Put in a coconut filling!

9.Shut up! Just push it up like this! The last opening should be pinched tightly to prevent the filling from leaking during the second serving!

10. Wrap five pieces of dough in turn! Close the mouth downward! Put it in the oven, don't turn it on, put a bowl of hot water inside, close the oven door and let it go!

11. When the dough is about 1.5 times larger than before, take it out Brush with water and sprinkle with coconut! Meanwhile the oven is preheating!

12. Baking in the oven! Don’t burn it, please cover it with tin foil in time! 130 degrees and 20 minutes! My oven is about 50 degrees hotter! It’s actually about 180 degrees!

13.Finished product! So fragrant and soft!

14.Cut!

15.It’s so delicious!
Tips
Keep an eye on it when baking and cover it with tin foil in time! Mine was not covered, so parts of the white coconut were browned! Not very pretty!
