Bone Broth ( 300ml ) | Fatty tofu ( 250g ) |
Meat Foam ( 50g ) | Salt ( a little ) |
Oil ( 20g ) | Light soy sauce ( a little ) |
Pixian Doubanjiang (One tablespoon) | Chili noodles ( 5g ) |
MSG ( A little ) | Garlic ( appropriate amount ) |
Pepper powder ( 5g ) | Cooking wine ( One tablespoon ) |
Ginger ( appropriate amount ) | Scallion ( One piece span> ) |
Water starch (for thickening) ( Appropriate amount ) |
How to make Mapo Tofu

1. Prepare a box of fat tofu.

2. Break the tofu into large pieces and put it in a cold water pot with a little salt and simmer over low heat 8 minutes to set.

3. Take out the cooked tofu with a slotted spoon, add cooking wine and light soy sauce to the minced meat Mix well, mince ginger and garlic, chop green onions, and put bean paste on a plate and set aside.

4. Prepare a bowl of cooked bone broth.

5. Add oil to the wok and add minced ginger and garlic, minced meat, chili noodles and bean paste.saute.

6. After minced meat is stir-fried, add tofu and infuse into bone broth, add appropriate amount of pepper powder and mix Simmer for a while.

7.After the tofu is flavorful, add water starch to reduce the juice

8.When the juice is almost gone, pour a few drops of oil to brighten it, turn off the heat and add a little MSG

9. Arrange on a plate and garnish with chopped green onions, and a spicy and fragrant Mapo Tofu is completed.
