Matcha powder (if available) ( A little ) | Cooked glutinous rice flour ( a little ) |
How to make snow-skin mooncakes

1. Prepare all ingredients and weigh them separately.If you want to use bean paste filling, the selected bean paste filling should not be too wet.It is recommended to make it yourself.I used homemade custard filling.

2. Mix glutinous rice flour, sticky rice flour, orange powder, sugar powder, condensed milk and milk.Make the batter.If you like the matcha flavor, you can divide some of it into the batter and mix in the matcha powder.

3. Coat the bowl with olive oil, pour the batter into the bowl, and cover it with a plastic bag , steam in the pot for 20 minutes, stirring once every 4 or 5 minutes.

4. Steam and let dry to warm.

5. Roll the dough into 17g balls and the filling into 33g balls.I used homemade custard filling, so I won’t write about it here.

6. Coat the panel, rolling pin and mold with cooked glutinous rice flour, and lay oil paper on the plate.Roll out the dough, add the filling, compact it with a mold, and put it in the refrigerator.
