How to make small cookies

1.Put the flour, fine sugar, yeast, salt, and water into the container

2.Mix the ingredients directly by hand, and then knead the dough by hand

3.Knead until the dough is smooth and elastic, add liquid butter and continue kneading

4. Knead the dough until a thin film can be pulled out, arrange the dough into a ball, put it back into the container, cover it with plastic wrap and let it ferment in a warm place

5.After the dough is fermented, deflate the dough

6.After the air is released, knead it into a long strip

7. Cut the long strip of dough into 16 portions (it’s best to use an electronic weighing scale.I divided the portions directly by feeling and the portions were uneven, some were large and some were small)

9.Pinch both ends of the strip and twist the strip twice, then turn the two ends down and stack them on the circle

10.Make 16 small cookies in sequence and place them on a baking sheet lined with greaseproof paper or tin foil

11.Add a tablespoon of water to the egg yolk, evenly

12.Use a brush to brush the surface of the biscuits

13.Sprinkle the brush with coarse sugar Place the biscuits soaked in egg yolk water on the biscuits so that the surface of the biscuits is covered with white sugar, then put them into the middle shelf of a preheated oven at 170 degrees and bake for 20 to 25 minutes until the surface turns brown.

14.It can be eaten after cooling

15.Finished product picture

8. Knead the divided dough into thin strips
Tips
The butter in the original recipe is 30 grams.I think it is too much so I reduced it.The butter can also be replaced with vegetable oil.The biscuits will taste crispy after baking. If they taste soft, it means the heat is not enough. You can bake them in the oven for a few more minutes until they become hard.
