Ingredients
Rice ( 1 large bowl ) | Eggs ( 3 ) |
Scallops (A handful of about a dozen) | Chinese sausage ( 1 Section ) |
Shiitake mushrooms ( 3 ) | Cooking oil ( 1 tablespoon ) |
Salt ( 2 grams ) | Scallions ( 2-3 trees ) |

1.Prepare the main ingredients.Soak the scallops in warm water half an hour in advance.

2. Dry the scallops and tear them into thin shreds by hand for later use.

3. Wash and chop green onions and set aside.

4. Chop the mushrooms and sausage into fine dices.(The sausage can be steamed in advance)

5. Beat the eggs and add a little less salt and mix well.

6.Put oil in the pot, heat 40% of the dry bess and stir-fry over low heat.

7. Fry until the color turns yellow and the water is slightly dry, remove and set aside.

8. Leave oil in the pot and pour in the egg liquid.

9.Slightly solidify and break into pieces.

10. Serve out and set aside.

11. Put a little less oil in the pot and add diced mushrooms.

12. Stir-fry until fragrant and soften and add diced sausage.

13.Add in the fried dried beets.

14.Add chopped eggs.

15. Pour in the rice and stir-fry together.

16. Fry until the rice grains are slightly shiny (about 2-3 minutes) and season with salt.

17.Turn off the heat, add the chopped green onion, and stir-fry evenly while using the residual heat.

18. Place on a plate and serve.
Tips
1.If the rice is taken out of the refrigerator, you can put it in the microwave for 1-2 minutes, so that it will not become lumpy and will fall apart more easily.
2.You can freely choose the amount of scallops and other ingredients according to your own taste.
