1. Prepare a piece of bacon, soak it in warm water, and change the water several times in between , try to soak out some of the salty flavor of the bacon.

2. Prepare a bowl of overnight rice.

3.Wash the carrots, large green peppers and chives.

4. Drain the soaked bacon and cut into small cubes.Just match the amount of diced bacon to the amount of rice.

5. Cut the carrots and green peppers into evenly sized dices.

6.Cut the chives into chopped green onions and prepare a few coriander leaves.

7. Boil water in a small pot, blanch carrots for one minute. After blanching the carrots, they become redder in color and easier to fry with other dices.

8.Put appropriate amount of oil in the pot, add diced bacon and stir-fry until fragrant.

9. Add the diced carrots and stir well.

10. Add the diced green pepper and stir well.

11. Set aside the diced rice, put the rice into the middle of the pot, and scatter the rice , stir-fry evenly.

12.Add a small spoonful of June fresh braised soy sauce for color.

13.Turn off the heat, add chicken essence, and stir in chopped green onion.

14. Serve on a plate and garnish with a few coriander leaves.A plate of fragrant tripe fried rice is ready. This is a picture of the finished product.Isn’t it very appetizing?
Tips
The amounts of the three side dishes can be increased or decreased according to personal taste.Remember to blanch the carrots before frying.Add salt according to your own taste, because both bacon and June fresh soy sauce are salty.I didn't add any salt to this because it was already salty enough.
