Eggplant ( 1 root ) | Old Soy sauce ( 5 grams ) |
Light soy sauce ( 20 grams ) | Vinegar ( 10 grams ) |
Sugar ( 10 grams ) | Ketchup ( 10g ) |
| Starch ( 25g ) | Onions ( 5 grams ) |
Garlic ( 3 grams ) | Oil, salt ( appropriate amount ) |
How to make sweet and sour eggplant

1.Eggplant strips + starch and mix well

2. Sauce: half a bowl of water, 5g dark soy sauce, 20g light soy sauce, 10g vinegar, 10g sugar, 10g tomato sauce, 5g starch and mix well

3. Oil at 70% hot, add eggplant and fry until golden brown and crispy

4.Leave oil in the pot, add onion and garlic and saute until fragrant

5.Add eggplant and sauce and stir-fry until thick

6.Add vinegar, sugar and salt according to taste, stir well~
