Eggplant: promote blood circulation
Ingredients
Eggplant ( 2 pieces ) | Minced garlic ( 2 spoons ) |
Minced green onion ( 2 spoons ) | Pixian Doubanjiang/or without ( 2 spoons ) |
Chicken essence ( 1 spoon ) | White sugar ( 2 spoons/2 and a half spoons ) |
| Salt ( 1 tsp ) | Soy sauce ( 1 spoon ) |
Light soy sauce ( 1 spoon ) | White vinegar ( 3 spoons ) |
Water ( 6 spoons (2 times of white vinegar) ) | Starch water (you can not use starch water to collect the juice) ( appropriate amount ) |
Recipe for Braised Garlic Eggplant with Sauce (Tomato Sauce Noodles and Tomato Sauce Rice)

1.Wash and peel the eggplant

2. Cut into sections evenly/soak in water (can Put a little salt in the water)

3. Add some water/set aside

4.Garlic, Mince the green onions, or mince/mash the garlic (be careful not to choke your eyes) and set aside
If you put 3 tablespoons of bean paste in a small spoon, it will enhance the flavor
5.Salt, chicken essence, white sugar, soy sauce, light soy sauce, white vinegar and water are mixed well.Reserve the sauce
Set the starch water (stir when using)
6. Add a little oil to the pot, add the minced onion and garlic over medium-low heat and stir-fry until fragrant, add bean paste and stir-fry until fragrant

7.Add eggplant and stir-fry for a while

8.Turn the eggplant twice and add the sauce

9. Stir-fry evenly over medium-low heat, simmer the eggplant with the sauce until it is cooked

10.After making sure it is cooked thoroughly, add starch water to reduce the juice
