Peanut oil ( 25g ) | Salt ( a little ) |
Aged vinegar ( 25g ) | Lemon juice ( 5 drops ) |
Cold water ( 25ml ) |
How to make lemon-flavored lotus root strips

1. Wash and peel the white lotus root.

2.Cut into thin slices.

3.Change the knife and cut into long strips.

4. Cut the lotus root strips and rinse them repeatedly with water.Wash the starch and soak it in clean water..Prepare lemon, cut some ginger, green onion and dried chili.

5. After the pot is hot, pour in the peanut oil.

6. Add onion, ginger and chili and saute until fragrant.

7. Pour in the lotus root strips and stir-fry for a while.

8.Take it with a pinch of salt.

9. 25ml mature vinegar mixed with 25ml cold boiled water to make juice, pour the mature vinegar along the pot ring juice (I personally like to use aged vinegar, the color will look better if I add white vinegar).

10.Finally squeeze a few drops of lemon juice, stir-fry evenly, and quickly remove from the pan.

11.Install the disk.
Tips
1.Rinse the lotus root strips repeatedly with water to remove the starch and soak them in water to prevent oxidation and discoloration.
2.Put white vinegar on the lotus root strips and the color will be brighter.
3.You can mix salt and vinegar with cold boiled water to make a juice instead of thickening.
4.The lotus root strips have a crispy texture and must be stir-fried quickly over high heat.
5.Lemon juice will evaporate quickly when heated, so be sure to add lemon juice to taste before serving.
