How to braise bamboo shoots

1.Fresh spring bamboo shoots as a spare

2.Peel off the shell of the bamboo shoots, wash and cut into slices for later use

3. Pour water into the pot and bring to a boil, add bamboo shoots and cook for a few minutes

4. Take out the bamboo shoots and put them into cold water

5.Chop onions, garlic and red peppers and set aside

6.Pour appropriate amount of oil into the pot Add onions, garlic, red peppers and saute until fragrant

Tips
Bamboo shoots should be fresh and tender in texture, yellow or white in color; hairy bamboo shoots should be neat in color, white in color, and tender; bamboo shoots along the rows should be tender in texture and color.Tender ones are better; winter bamboo shoots are better if they are yellow with a hint of white.
