How to make eggplant with oyster sauce

1.First wash, peel and cut the eggplant into thick strips. You don’t have to peel it if you like to eat it.

2. Put the cut eggplant strips into a pot and steam until cooked. It will take about ten minutes to be cooked thoroughly,

3. Chop all onions, ginger, garlic and peppers and set aside.I didn’t take any photos of ginger and garlic here

4. Take a small bowl, add a little water, and add light soy sauce , oyster sauce, braised soy sauce and mix well.

5.This is the steamed eggplant.Take it out and set it aside for later use.

6.Put a little oil in the pot, stir-fry the ginger and garlic until fragrant, then add the chili and stir-fry for a while.(You don’t need to put too much oil, just the amount you usually use for cooking, because steamed eggplants no longer absorb oil)

7.After frying the pepper for a while, pour the steamed eggplant into the pot and stir-fry evenly.

8.Then add the prepared sauce and stir-fry.If it feels light, add an appropriate amount of salt, p>

9. Stir-fry quickly until the eggplant is fragrant and the soup is dry.Add the chopped green onion and stir-fry for a while before serving..

Tips
Cover the eggplant strips with plastic wrap and put them in the microwave and cook over high heat for five or six minutes. The effect is the same as steaming.
If you want to eat something lighter, you don’t need to add salt to this dish, because the light soy sauce and oyster sauce are already salty.
Because the eggplant has already been steamed, when frying later, it is to stir-fry quickly over high heat, as long as the eggplant is flavorful.
