Ingredients

Oil ( appropriate amount ) | Starch ( Appropriate amount ) |
Light soy sauce ( 2 spoons ) | Dark soy sauce ( 1 spoon ) |

2. Prepare the ingredients as shown in the picture

3.Peel the potatoes and cut into hob pieces for later use

4.Cut the eggplant into hob cubes, add salt and marinate for 10 minutes

Tips
Only put oil once in the whole process.When adding the sauce at the end, you can stir-fry it evenly and simmer for three to five minutes.
