How to make green onion flower rolls

1. Prepare materials
Warm water over 40 degrees Celsius, yeast powder, flour, etc.Back up according to the instructions in the main ingredients.
2.First time baking
Warm water + 4g yeast powder + 250g flour in Stir it into a batter in a basin.Don't let gluten form.Add more warm water until it can't be touched by chopsticks.
3. Cover the pot with a lid or plastic wrap.It takes about 2 hours in summer and about 2 hours in winter.After a longer time, there were a lot of bubbles in the lake in front of me, as shown in the picture below.

4.Add dry flour
Add about 600g of dry flour and stir into dough.As shown below.
5.Knead the dough
Knead the dough into a ball, do not make it very smooth.Just drain the air out of it.If you need more noodles, you can add some warm water.As shown below
6.Wait for the second rise
Cover the pot to keep it fresh Membrane fermentation takes about 1 hour in summer.In winter, warm water needs to be added to help it ferment, and the volume will ferment to 2 to 3 times its original size.
7.Kneading the dough
You don’t need to add water this time, just add some dry flour and stir.Knead the dough until it becomes a very smooth dough with no cracks or bubbles.As shown below
8. Roll the dough into dough.If the dough is large, you can cut it into several pieces.Roll out into dough.

9.Add ingredients
Add salt, salt and pepper powder, and corn oil to the dough.As shown in the picture below
10.Fold the dough
Fold the dough from the outside to the inside.As shown below

14. Wake up the noodles (the third time)
Add warm water to the steamer, put the flower rolls into the pot to proof, do not heat, etc.For about 10-15 minutes, wait until the Hanamaki becomes a little fatter and start steaming.
15.Steamed Hanamaki
The following is a picture after waking up.Start steaming for 20 seconds.minutes or so.
16.Take the flower roll
Take out the flower roll from the steamer, it is very hot, and If it sticks together a bit, wet your hands with a bowl of cold water and take it out.
17.Plate placement
Start eating.
Tips
Hanamaki needs to be rested before steaming so that it becomes softer after steaming.
A total of two proofings are required.Otherwise it will fail.
