Ingredients

How to cook loofah with edamame and fungus

1. Peel and wash the loofah, and cut into oval slices of about 2 mm..(As shown in the picture)

2. Wash and chop the shallots, wash and cut the garlic into small rounds piece.(As shown in the picture)

3. Then prepare the black fungus soaked in advance and pick it into small florets , peel the edamame, remove the film, wash it, and put it with other ingredients for later use.

4. Pour an appropriate amount of oil into the pot, heat it to 70% heat, add the edamame and stir-fry.

5. Add a little salt and stir-fry until the surface of the edamame becomes wrinkled and turns green.Out of reserve.

6. Continue with the remaining oil in the pot, add dried shrimp skin, garlic slices and Stir-fry the chopped green onion until fragrant.

7. Then add the loofah and black fungus and stir-fry evenly.

8.After the loofah changes color, add a spoonful of sugar and continue to stir well.

9. Then add an appropriate amount of salt, add the pre-fried edamame after the water is out, and stir together Stir-fry until the flavor is infused, and finally add a little shrimp powder to finish.

Tips
1.Add some sugar to the fried loofah to make the loofah look green and fresh.
2.When stir-frying edamame, water will react with oil.Adding a little salt can prevent oil from splashing and help absorb the flavor.
3.The shrimp powder added at the end is the powder I grind from dried shrimp skin.If you don’t have it, you can replace it with chicken powder to add freshness.
