How to make hand-made kimchi noodles

1. Add flour to water and mix into dough, let it rest for 10 minutes

2.Use a rolling pin to roll the noodles into thin layers

3.Cut into noodles p>

4.Shake loose to prevent adhesion

5. Take out the hot and sour kimchi (pickled ginger, sour cowpea, cabbage, pepper) from the kimchi jar

6.Chop the kimchi

7. Heat the pan with cold oil, add kimchi and fry until fragrant

8.Add an appropriate amount of water, bring to a boil and remove the chicken essence for seasoning

9.Sprinkle with chopped green onion , turn off the heat.

10. Boil another pot of water, start rolling the noodles after the water boils

11.After the noodles are cooked, take them out

12. Pour the prepared kimchi soup and it is ready to eat.
Tips
1.The dough for rolling noodles should be soft and hard.When kneading, you can add a small amount of salt to increase the texture of the noodles.Don't add all the water at once, add it little by little.The reconciliation should be done with three lights: face light, hand light, and basin light.
2.After the dough is mixed, it must be rested for 5-10 minutes, so that it is easy to roll out.When rolling out the dough, you can sprinkle some corn flour to prevent sticking.You can also sprinkle flour, but you must not sprinkle starch.
3.Because the kimchi I make myself is spicy and sour, I don’t need to add chili pepper and vinegar.
