How to make ginger-fried duck shreds

1. Prepare ingredients.

2. Slice the garlic, cut the pickled pepper into small rings, and cut the shallot into sections and set aside.

3. Cut the soaked ginger into shreds and set aside.

4. Shave the duck meat and cut into shreds.(You can add an appropriate amount of starch to make it tender when fried.I personally care about the fat in the duck skin, so I need to stir-fry the oil without adding starch)

5. Pour oil into a hot pan and heat until 80% hot.

6. Add duck meat and stir-fry for a while.

7.Add appropriate amount of cooking wine and stir-fry for a while.

8. Add garlic, chili rings, and shallots and stir-fry until fragrant.
